Sweet Potato Black Bean Burrito with Avocado Sauce


“This tastes way too good for something that doesn’t have meat in it” – My husband. Elaborated with “The green stuff makes you not even miss meat”.  Anyone who knows Andrew would have a hard time believing that these were words uttered from between his carnivorous lips but, I kid you not.


I hate to be all cliché with a “Meatless Monday” post however my last 3 posts have included bacon. I apologize (not). This meal can  be ready in no time; much of the prep can be done while the sweet potatoes are roasting. It’s healthy, hearty, and delicious; a dinner that we both get really excited about even without the decadence of meat (or even cheese for that matter). Serve or garnish with what you wish, but the smooth and bright avocado sauce is not optional.

Makes 2-3 servings, depending on your appetite.
Sweet Potato Black Bean Burritos
1-2 lbs sweet potato, diced (approx. 2 large potatoes)
1 teaspoon cumin
1 teaspoon chili powder
¼ teaspoon chili flakes
Salt and pepper
1-2 tablespoons olive oil
1 can black beans, drained and rinsed
¼ cup diced red onion
Flour or Corn Tortillas (we used 7 inch flour tortillas because that’s what we had!)

1 avocado
1 lime, juiced
¼ cup cilantro
1 clove garlic, minced
1/3 cup salsa verde (We use Herdez brand)
Dash chili flakes
Salt and pepper
2-4 tablespoons water (optional)

  1. Preheat the oven to 425F. Line a large baking sheet in aluminum foil or parchment paper.
  2. Toss the sweet potatoes in oil, cumin, chili powder, chili flakes, and salt and pepper. Arrange potatoes on prepared baking sheet in a single layer. Roast for 20-25 minutes, stirring every 5-7 minutes or so, until fork tender and sufficiently browned. Add red onion and black beans and toss
  3. Assemble in tortilla as desired, ensuring every bite has sufficient sauce


Avocado Sauce

  1. Combine all ingredients, except water, in the food processor and run until smooth. Add water if you prefer a ‘looser’ consistency.


Let’s be real.  This is how every burrito ends up looking. Who are we kidding? Fork and knife strongly recommended.
