Watermelon and Feta Salad


It hasn’t exactly been a blazing hot summer here in Southwestern Ontario. When I think of August my mind wanders to biting into a piece of watermelon as means of refreshment and relief from the sticky summer air.
This past weekend was a bit more in speed with my summer expectations..and it seems we are at the start of a heat wave. This makes it a bit easier to push images of falling leaves and knit sweaters further from my mind. And..bring on the watermelon!

Next weekend is labour day and this salad is perfect for a long weekend BBQ. It is light and fresh and would be great next to some grilled chicken or fish. Or anything really. Heat optional.

Although I used a spring mix in the above photo. I think the salad could have benefited from some peppery arugula thrown in.

For dressing: Use any balsamic dressing you like, but I always gravitate to just an 1 parts oil and 3 parts balsamic vinegar. For this salad I also added a bit of a lime and watermelon juice.

Enjoy the last days of summer…for me…that means many, many ice cream cones.


spring mix (+arugula!)
about ¼ of a large watermelon, diced into 1 ½ inch cubes
large handful of mint leaves
3-4 oz of feta cheese
salt and pepper to taste

1 ½ tablespoons olive oil
3 tablespoons balsamic vinegar
squeeze of lime (optional)
about 3 tablespoons freshly squeezed watermelon juice (optional)
salt and pepper to taste

1. Toss all salad ingredients together in a large bowl
2. Dress to taste
