Chicken Pesto Caprese Sandwich

Apologies for the phone photo. I literally just finished eating this.  This sandwich was so fast to prepare, so summery, and so delicious that I recommend you eat this. Soon.

2 chicken breasts, cooked and shredded (we shredded the remainder of a cooked deli chicken)
1/4-1/3 cup (approximately) of your favourite pesto (or this one)
1-2 tomatoes, sliced
Fior di latte cheese, sliced (we used about 100-150 grams)
Romaine lettuce, or other salad green
Soft buns, or a whole wheat baguette cut to the size of sandwich you desire!
*I think this would be GREAT with a drizzle of balsamic glaze!
1. Combine chicken and pesto sauce. For us, both of these things came out of the fridge, so I combined in a small frying pan until warmed.
2. Arrange lettuce, tomatoes, cheese, and chicken in between your top and bottom buns. Serve with summer, and watermelon slices for dessert.
